How to Make Homemade Buttermilk Eggnog Pancakes

...and now that you've made your awesome Buttermilk Eggnog if there's any left, you can make these beauties!...


  • 2 cups flour
  • 1 tbsp sugar
  • 1 tsp salt
1 tsp baking soda
  • 2 eggs
  • 1/2 cup buttermilk
  • 2 cups buttermilk eggnog
  • 4 Tbsp melted butter
  • 1 tsp vanilla
  • 1 tsp nutmeg
  • lemon butter below


In a large bowl mix wet ingredients together with the vanilla and nutmeg.

In another bowl mix the dry ingredients together.

Mix the dry ingredients into the wet ingredients cup by cup. Mix it just enough, small lumps are ok.

Lightly wipe griddle with vegetable oil and cook your pancakes.

Top with the lemon butter, whipped cream or how about some how made creme fraiche?

Lemon Butter:

2 Tbsp grated lemon zest,
  • 3 Tbsp icing sugar,
  • 1/2 Cup (1 Stick ) unsalted butter, softened

Combine all ingredients in a bowl and mash it together until all the sugar and lemon are incorporated. This can be made ahead of time. Refrigerate until needed.
