    What type of rennet to use when cheese making?

    Ask these questions to help guide you:

    How large are my batches of milk? 

    See the 'Volume of Milk' column.

    Do I want to make Vegetarian or Organic Cheese? 

    See the 'Vegetarian' and 'Organic' columns.

    Do you prefer liquid or powder rennet? 

    Powdered rennet requires preparation before adding it to the milk. However, it costs less to ship.

    Are you going to make fresh cheese or aged cheese? 

    Calf rennet (animal rennet) is considered to be the best choice for longer-aged cheeses. Vegetable rennet can create a bitter taste during long aging periods (6 months).

     

    ** Please note: ** Junket liquid rennet (and Junket tablets which we do not carry) are is 80% pepsin, and therefore weaker than cheese rennet. Junket is perfect for ice cream, puddings or custards. For cheese, please use any other type of rennet for better results.

    *** Please note: *** Home cheese makers using powdered rennet will be 2 grams per batch ranging from 8 to 100 Liters. Therefore, the total volume of milk that powdered rennet is good for will be lower.
