Biena Thermophile Type C. For the production of Alpine type high cook cheeses such as Gruyere, Fontina and Beaufort. Works well with propionic bacteria for eye production in cheese such as Emmental and Jarlsberg. 


Streptococcus thermophilus

Lactobacillus helveticus

YIELD: 1 dose (10 g) - will inoculate approx 40 litres of milk.

DIRECTIONS: Use approx. 1/4 tsp per 3-4 gallons (12-15 litres) of milk.

Add directly to your milk when called for in the recipe. Sprinkle on surface of milk and allow to rehydrate 1-2 minutes. Mix thoroughly.

STORAGE: Store in the freezer.
