Lyofast ST 071 ensures a uniform and controlled production of fermented milk, stretched cheese (like mozzarella), soft cheese and hard cheese. Can be used 50/50 with Lyofast SH 092 F in the production of mozzarella. All SACCO culture are freeze-dried and can be added directly to the milk without any further reproduction.
