A multi-purpose mesophilic culture for Camembert and all soft and semi-hard cheeses. Lyofast MW 036 N ensures a uniform and controlled production of fermented milk, fresh cheese, soft cheese, and semi-hard cheese. Lyofast MW 036 N has citrate fermentation. All SACCO culture are freeze-dried and can be added directly to the milk without any further reproduction.

Lactococcus lactis ssp. lactis,Lactococcus lactis ssp. cremoris and selected strains of Lactococcus lactis ssp. lactisbiovar diacetylactis, and Leuconostoc.

Storage: Store at -17 C for 18 months

Certifications: Sacco S.r.l. is UNI EN ISO 9001:2008 certified since 1998, ISO 22000:2005 and FSSC 22000 certified since 2014. Sacco cultures are generally Kosher approved except for surface ripening cultures.
