PICKLED VEGETABLE RECIPE

Ingredients and Equipment:

  • 1 pouch of Pickled Vegetable Culture (Ferment)

  • Head of cabbage or sauerkraut, cucumbers, celery, beans, beets and peppers

  • Salt

  • 1 Cup Water (distilled, bottled, purified or tap)

  • 1 tsp. Sugar

  • Canning jar with rubber seal

Directions for Use:

  • Sanitize all utensils and pot with soap and hot water, rinse and dry.

  • Slice the cabbage head into shreds of cut vegetable of choice into sections and

    wash.

  • Put the vegetable into a bowl and sprinkle salt (10 grams of salt per kg. of

    vegetable). Mix well.

  • In a separate dish, combine in 1 pouch of cultured vegetable pouch with 1 tsp. of

    sugar and 1 cup of lukewarm water.

  • Press the cabbage or vegetable into canning jar one layer at a time. While

    pouring the culture water between the layers.

  • Be sure to leave 7-8 cm free space under the edge of the jar.

  • Seal the container with lid with rubber seal to ensure it is air-tight.

Allow the vegetables to sit in a warm place 68°F – 75°F (20 –24°C). After 2 days,

gas production will have built up inside the jar. Open the jar carefully and let the gases escape. Close the jar again and continue to ferment at room temperature for 5-6 days.

  • After fermentation time, store in fridge and enjoy this treat!

Storage: Enjoy for up to 4 weeks. The flavor will increase during storage since the microorganisms stay active even in the refrigerator.

 

Shelf Life: The Yogurt culture Pouch for long-term storage should be either in a refrigerator for a shelf-life of 2 years.
