CHOOZIT MD 88 OR CHOOZIT MD 89 - Flavour enhancer for Soft Cheeses using Mesophilic Culture

This culture is an optional flavor enhancer to cheese. It works with Mesophilic culture to develop a buttery flavor in fresh or soft cheeses like brie, chevre and blue cheese. This culture is also helpful for flavor and eye development (small eyes) in Edam or Havarti. It is not used on its own in the milk but in combination with other cultures.
Amount Needed: Will set up to 1250 gallons of milk. Can be divided into 25 gallon batches for farmstead use and 8-10 gallon batches for home use.Use 1/2 teaspoon for approximately 6-12 gallons. This is to be used as a guide since setting temperature, stage of milk and type of cheese will call for specific amounts to reach proper acidification rate.
Storage: 18 months from date of production at temperatures below 4°C (39°F).
